Sesame is a flowering plant in the genus Sesamum, commonly known as “Till”, is one of the oldest cultivated plants in the world. They are tiny, flat oval seeds with a nutty taste and an almost invisible crunch. They come in a host of different colors depending upon the variety, including white, yellow, black and red.
Sesame seeds are used to add texture and flavor to a variety of rolls, crackers, salad dressings, bakery and confectionery, candy making, production of Tahini and Sesame Oil (which is used for cooking, manufacturing perfumes, pharmaceuticals, and cosmetic products).
The Chinese used sesame seeds 5000 years ago to prepare ink blocks while the Ancient Egyptians ground the seeds to use as flour.
India produces a wide variety of Sesame Seeds varying in color from white to red to black with oil content varying from 40-50%. The white and black Indian Sesame seeds are mainly used for direct consumption in foods. The brown Indian Sesame seeds are mainly used for oil extraction. These have oil content of around 45-50%. The white Indian Sesame seeds have the desirable nutty taste and are used for making sweets, baked foods and confectionaries. The black Indian Sesame seeds are used for seasoning and for fries. Hulled seeds are also used for snack preparation.
